Banks 5 Island Rum is 3 year collaboration between Winebow, a NYC Mixologists group and the Rum Merchant in Holland. Basically the idea is that of having an aged Rum with all the smooth qualities and pretty aromatics normally associated with aged Rums but without the "brown color" resulting from the ageing process. To obtain this, Banks Rum is put through a "Special" filter ( reverse osmosis ) to strip out the color from the wood ageing therefore you have a clear spirit. It's absolutely delicious.
